Recipe: SPECULAAS (Dutch biscuits)

Speculaas, a Dutch biscuit, is very easy to make especially for a person who finds making biscuits a challenge. Make some for Easter. You can reduce the sugar in the recipe without affecting the taste too much if you are very health conscious.

Ingredients:

250 gm (8.8 oz) butter
1½ cups light brown sugar
2 large cups self-raising flour
1 teaspoon cinnamon
¼ teaspoon each of – allspice, cloves and ginger

Method:

Mix softened butter with sugar.
Add spices and flour and mix well to a firm dough.
Roll into small balls, flatten and place on greased baking tray.
Bake in a low oven for approximately 20 minutes.
Slide biscuits to cool on wire rack before storing in an airtight container.

(N.B. SS uses the conventional baking programme of her oven, setting it at 160 degrees Celsius (325 deg F), with baking time between 20 and 25 minutes.
You can get between 55 and 60 biscuits, depending on how small each ball of dough is.
The biscuits remain fresh for at least a week if stored properly).

Mango Strawberry Sunset
Goes well with your biscuits for Easter Entertaining

Ingredients:

2 mangos
2 cups Vanilla Nonfat Greek Yogurt
4 tablespoons Organic Light Agave Nectar
24 strawberries

Directions:

1) In a blender, combine the mangos with 1 cup yogurt and 2 tablespoons agave. Puree. Divide among three 16-ounce glasses.

2) In a blender, combine the strawberries with 1 cup yogurt and 2 tablespoons agave. Puree. Fill each glass with the strawberry mixture. Garnish with fruit.

TIP: For a sunrise, reverse the layers. Save some fruit for garnish.
